Pan Fried Asparagus


Yep, it's ANOTHER asparagus recipe! I can't help it...I could eat asparagus with every meal and am always on the lookout for different ways to prepare it. Never before have I pan fried it, but was it ever delicious! I'm pretty excited, too, because my parents had given us a Foodsaver, which we just got around to using for the first time, the other night. I intend to stock up on asparagus over the summer and freeze it, so I have it readily available year round :) By the way...if you don't have a Foodsaver, it's truly wonderful!!!

Pan Fried Asparagus

1/4 cup butter
2 tablespoons olive oil
1 teaspoon coarse salt
1/4 teaspoon ground black pepper
3 cloves garlic, minced
1/2 pound fresh asparagus spears, trimmed (I didn't trim mine as nicely as I should have!)

Directions:

Melt the butter in a skillet over medium high heat. Stir in the olive oil, salt and pepper. Cook garlic in butter for a minute, but do not brown. Add asparagus and cook for about 10 minutes, turning to ensure even cooking.

  2. I HEART asparagus!!! I cooked it every day I was pregnant. I have tried cooking it in the oven with olive oil, but never pan fried. This would be a good summer method so I don't have to turn on my oven. Will definitly try this one. Thanks.

  8. I love asparagus. I usually roast it. This way sounds terrific. I have a foodsaver also, and I loveit. Never thought to do seasonal veggies, Ill have to try.

  10. I love asparagus too, but I've not tried frying it-sounds delicious though! I do roast it in the oven and it's awsome with garlic and olive oil.

  11. I'm a huge fan of asparagus also. Probably my favorite veggie. This looks perfect! I've never used a food saver, but I've frozen tons of asparagus. I love pulling out a bag in the wintertime and not paying out of season prices. Good for you!

  13. I love asparagus too! It's so pretty. Paula Deen made a sandwich with them one time and I'm curious about how that would be. Yours look so good. You could just eat a whole plate of them and feel good about it : )
